A Heavy Heart...

Well I just got back from the Hospital.

About a half hour before I left work today I got news that my Grandma had fell and was in the hospital going under testing.

She had been on a vacation to the mountians with my aunt and uncle.

She had been so excited to go.

Oh it pains me so much to see her in so much pain.  Even seeing her precious face light up when I walked in that hospital room makes me hurt thinking about it.

Im sorry yall...I know this is more of a weight loss blog but...if you could do me a favor and say a prayer for my Grandma?

She is 83 years young and this is the first bone she has ever broken.  Her hip is broken, her right elbow was bleeding horribly from the fall and she tore tendons and muscles in it and had to have stitches.  She has a huge bump and cut over her eyebrow and a cut on her hand.

I love her so much.

I am very close to her, and was to my Grandpa before he passed away when I was 16.  We lived with them when I was a baby.  They are probably the best people you would ever come in contact with.

Ok on to food before I get all emotional here...

Breakfast: Waffles, peanut butter, and bananas!

Lunch: A delicious egg salad (boiled egg, S & P, reduced fat olive oil mayo, yellow mustard) on wheat bread, my light lays and strawberries...

It was so good.

I did get hungry though in the afternoon.  I had 100 cal chocolate pretzles with some peanut butter and then...a "hill" of bread with some peanut butter.

Dinner: My Healthy Chicken Parmasean...this is SO yum I will totally share the recipe soon with yall if you want!! And a side of light pasta and salad with 1 tbsp ranch, sprinkle of cheese, and about 1/4 egg.

Sorry I didnt post calories, I am so tired and hubs is trying to sleep and that would require me getting up and finding my phone LOL. But if you want to see my cals friend me on myfitnesspal lauryn86.  However, tommorow, I should be back on track.
I just got home though and I am so tired yall.
I hope you all have a blessed night and a great day tommorow.

  3. So sorry you had such a crapy day yesterday. I am hoping your grandmaw is doing better today. I love egg salad but haven't been able to find a low calorie recipe for it. Do you like the olive oil mayo? Some people have told me that it tastes weird. Is it a lot lower calorie than the others?

    1. Thank you sweet Sheila!! They are going to run tests on her heart today to make sure she can undergo the surgery but it is scheduled for today and we are lucky she got a good doctor! I *like* the mayo w/olive oil but I have been using packets from Panera bread!! LOL I havent bought a big one yet haha but it tastes pretty much the same to me. Maybe go to panera and sample it before you buy it LOL! Its 35 cals for a packet, so prob 45 or 35 for a tbsp! :)

    2. Lol I love it..you are frugal like me. I am going to do that. I know you are busy right now but when you have the change could you give me what all/how much you put in it? This is a great cheap lunch idea.

    3. Hehe! I love being a frugal diva!! LOL Sure its no problem, it is a GREAT cheapie lunch! If you are using regular FF mayo, just use about a TBSP, and squirt in there like maybe 1 teasp. of regular old yellow mustard, and take one hard boiled egg and just *mash* lol it up!! And I always add salt and pepper! Be careful with the mustard, start little and taste it bc you can always add more but not take away. LOL. It ends up to be about 100 calories depending on your mayo and i never really count calories for mustard LOL. Esp. that small of an ammount. Then just count cals for your bread. Its SO good, I had it for bkfast today! LOL..could also eat it with crackers.

  6. I love reading your blog love! I was catching up on it after being out of town & Kayla walked by & said, "Cupcakes and Kickboxing"....starts grinning & commenting on how cute the name is & how she would have never thought of that. Do you make your own salads, or do you buy a certain bagged mix?

  7. We're doing good. I buy the bagged mix at Walmart too. I have been wanting to switch it up a bit & get one of the different varieties but I'm not sure if I will like it. Your pic of your salad in this post looked diff than what I get, that's why I asked. I usually just get the kind w/ veggies & iceberg lettuce, but I kinda want to try the kind that's called spring mix or something. There's one w/ spinach & other mixed greens. I don't know if I've ever had a salad w/ spinach! Where have I been? lol I'm so glad you discovered the Peter Pan whipped pb btw! I have been using that for years & I love it!
